Biography

Elena Villacrés is a Food Engineer from the Technical University of Ambato. He has a Master's Degree in Food Science from the National Polytechnic School and an international diploma in Packaging, packaging and packaging for food from Assistpack - Envapack, Cali, Colombia. He has worked in Quality Control of raw materials and finished products in the food processing plant of the Ministry of Health, (PAAMI) and the Ecuadorian Company of Malta and Beer, CEDMYC. He has been a researcher for the INIAP Cereals Program. Director of several research and development projects in food. Visiting professor at the Equinoctial Technological University and the Technical University of the North. Instructor in the Graduation Seminar Program of the Technical University of Ambato. She has been a proponent and manager of the quality standards NTE, INEN 2646 (amaranth), NTE, INEN 2647 (sangorache), NTE, INEN 2389 (bitter chocho), 2390 (desmamargado chocho) and the Andean SG / RT.RAN standards. 2014 / IV / ACTA (lupine) and NA 0038 (quinoa).

He is currently a Researcher in the Department of Nutrition and Food Quality of INIAP. His professional skills include the physical, nutritional and functional characterization of foods. Sensory tests and estimation of the shelf life of food. Research and development of products and processes, in food. Development of technological alternatives to improve the competitiveness of various crops, with an emphasis on Andean crops. Characterization of the agro-productive chain of Andean grains. Escalation of processes at the pilot plant level and technical-financial feasibility studies for the implementation of SMEs.
